Congratulations to Kathleen Barbour, of Mangawhai, who won the Matakana Village Butchery Win a Christmas Ham competition. Mahurangi Matters readers were invited to submit their favourite glaze recipe or their favourite Santa joke to go in the draw for the ham. Thanks for the recipes and jokes. Here’s a selection …
Super quick orange ham glaze
Juice from 1 orange (about 1/2 cup)
1/2 cup brown sugar
1 tbsp soy sauce
1 tsp Dijon mustard
Mix all together. Apply to ham for the last 45 mins of cooking. Never fails.
Baked ham with sweet bourbon mustard glaze
1 cup honey
1/2 cup molasses
1/2 cup good quality Kentucky bourbon
1/4 cup orange juice
2 tablespoons Dijon mustard
1 ham half
Preheat oven to 325F. Combine the honey and molasses. Heat in the microwave or in a pan on the stove top. Stir in bourbon, orange juice and mustard. Remove all but about 1/4 inch of fat from the ham then place in a roasting pan. Bake for about 1 1/2 hours or until a meat thermometer reaches 140F. Baste ham occasionally with the mix. Transfer drippings to a saucepan and add remaining mix. Bring to boil. Slice ham and serve with the glaze.
Marmalade bourbon and orange glaze
1 1/2 cups marmalade
1tsp grated ginger
1 crushed garlic
1/4 cup bourbon
2 tbsp grain mustard
1 cup orange juice
